Mushroom soup 磨菇湯


Mushroom soup 磨菇湯
Ingredients

4 cups button mushrooms, peeled and chopped
1 small onion, finely chopped
1 tablespoons olive oil
salt
black pepper
finely chopped parsley
1 small clove of garlic, peeled and chopped
1 1/2 pint vegetable stock
(see measure conversions for more information)

Method
- Heat the oil in a large saucepan and cook the onion and garlic gently until they are transparent.
- Add the mushrooms and cook until soft but do not brown.
- Add the stock and allow to simmer for about 30 minutes.
- Remove from theheat and season.
- Taste to check seasoning.
- Blend.
- Stir in a little chopped parsley.
- Reheat and serve.

Recipe 2 磨菇湯 (Mushroom Soup)
材料:
磨菇 100克
鹽 1/4茶匙
細洋蔥 1/2個
胡椒粉 少許
植物牛油 15克
麵粉 15克
上湯 / 水 250毫升
奶 250毫升
方飽 1片

製法:
1. 將磨菇切成幼粒。將洋蔥去皮、清洗及切幼粒。
2. 在煲內將牛油溶解,炒香磨菇及洋蔥 (不可炒至太深色)。
3. 加入麵粉,炒1-2分鐘。
4. 離火後,續漸加入上湯及奶。
5. 再用文火煲,不斷攪拌,至沸起,煮1-2分鐘。
6. 加入調味料,試味。
7. 將方飽烘至金黃,切粒上碟,伴食。
