白糖糕 煮粉糊秘決 - Video(韋太烹飪教室)


白糖糕 - 食譜/直接坐熱水製作圖

食譜 6吋圓形1件

1 熱水 120g+砂糖 42g 拌勻,放涼.
2.加入50g 粘米粉(先過篩),再攪拌勻.
3.慢火直接坐熱水推成米糊. 過篩.
4.加1/4 茶匙 依士粉, 1/8 泡打粉.拌勻.
5.蓋上保鮮紙發酵8 小時.
6.大火蒸 12分鐘.
7.如果想減些少酸味,蒸前加2滴梘水拌勻,再等半小時至蒸.

以下製作圖供大家參考.....參考

我曾經用過兩種方法整白糖糕.
1.用易潔鑊慢火煮,邊煮邊拌勻成糊,間中可能要離火攪,因為係好易煮杰左架!
2.煲滾水,熄火,直接坐入熱水2分鐘.(如下圖1)

再用慢火邊煮邊攪拌,大約5分鐘,開始成稀糊狀.


呢個時候,我就改用個膠刮不停攪拌/剷底 約5 分鐘,測試,煮到可以將糊撥開成兩邊,
但又好快(痴)番一齊.就差唔多可以OK .(下圖一撥開就見底.)


過篩後得番 155g.原來都蒸發左幾多架!


將1 茶匙米糊,加入依士和泡打拌勻,約1分鐘見到好多泡沫,即係未過期啦!

再倒回米糊攪拌勻.



哈哈! 發酵了2個半小時,已經有好多可愛的泡泡.



呵呵! 7 小時後就是這個樣子!



倒入蒸籠,我舖上牛油紙,大火蒸12分鐘,就係呢件甜甜酸酸的愛心白糖糕!

白糖轉黃糖,可否做出黃糖糕??
In the meantime there is no黃糖糕 video in youtube. I will try to find out the recipe of 黃糖糕 video later.

Did you read 韋太's book ? Because, I never write book.

Thanks a lot!! Yes, I've read 韋太 books. It seems that the recipes are very similar. But not 黃糖糕. Can find pictures but not recipe.
