Hong Kong Style Snow Skin Moon Cake with Black Sesame filling <br />

材料:<br />
冰皮粉 100克、固體油 6克、滾水 136毫升、黑麻沙 1湯匙、冰皮餡料(每粒) 30克、粟粉適量<br />
<br />
做法:<br />
1.冰皮粉及固體油放入碗中,倒入滾水,攪拌混合成糰。<br />
2.鋪好食物袋,放上糰搓成長條形,切成 2等份。其中一份加入黑麻沙,繼續於食物袋搓勻,成為雲石色糰。<br />
3.將剩低的糰一同平均分成 4等份,即兩款共 8粒。每粒放在食物袋上,用膠刮刀壓平壓薄,放入餡料,包好成圓波形。<br />
4.雙手撲上少許粟粉,將糰搓成圓柱狀,放入月餅模壓出月餅形,便大功告成!<br />

貼士:<br />
月餅模宜用新式塑料製的,較傳統木造月餅模較易操作及清洗。壓模時力度要適中,力度太小紋理不清晰,力度太大即會令餅皮唧出來。<br />
喜歡吃冰皮月餅多過傳統月餅,怪師傅我們用最簡單的方法自製,啊!原來真的很容易,今年可以慳回一筆月餅錢!<br />

1.印度米先用水浸20分鐘或按包裝指示浸泡,備用 <br />
2.薯仔切粒後泡水,紫洋蔥切絲,番茄切粒,備用 <br />
3.把羊西冷的皮下脂肪整塊割開,再切粒,西冷肉切粗粒 <br />
4.燒熱鍋,下少許油,放入羊脂爆至油釋出 <br />
5.下芫荽籽、孜然粉、黑胡椒粒、八角、桂皮和香葉爆香 <br />
6.下鹽及羊肉煎至微金黃後,加入紫洋蔥翻炒至熟,盛起少量留用,其餘放入電飯煲內膽<br />
7.薯仔放入鍋內煎香表面,放入(6)內,加入番茄及印度米 <br />
8.加入上湯和水,放入電飯煲接煮飯模式 <br />
9.完成後鋪上(6)餘下牛肉於飯面,即成<br />

水 30毫升 <br />
橄欖油 1茶匙 <br />
陳醋 適量 <br />
砂糖 適量<br />

做法 <br />
1.將麵粉、鹽放入製麵機攪拌盒,然後關蓋,按「搓揉」鍵。 <br />
2.把水和橄欖油加入蛋汁內,再慢慢倒入攪拌盒,待5分鐘攪拌成麵糰。 <br />
3. 以「幼麵」模杯壓出麵條,出麵時可撒點麵粉,以免麵條黏著。 <br />

鴨 1隻 <br />
滷水料 半包 <br />
薑片 3片 <br />
紅蔥頭 2粒 <br />
蔥 1棵 <br />
果皮 1瓣 <br />
魚露 50毫升<br />

做法 <br />
1.果皮浸軟刮瓤備用 <br />
2.滷水料洗淨瀝乾備用 <br />
3.鴨洗淨瀝乾,去掉尾部兩側肉粒,備用 <br />
4.將所有材料放入煲內,加入約200毫升水,大火滾起後轉細火,炆煮約1.5小時即成 <br />
5.放涼後稍冷藏以便切片或斬件進食,食時可配蒜茸辣椒醋<br />
